While rolling enchiladas isn’t difficult, it can get messy, and I always seem to have a few corn tortillas crack open.
So I figured, why not layer everything into a casserole? It honestly tastes the same.

This is truly an easy chicken enchilada casserole recipe. Instead of filling and rolling each tortilla, you simply layer tortillas, spoon over the green chile chicken mixture, sprinkle cheese, and repeat.

Enchilada Sauce:
Be sure to grab green chile enchilada sauce. I like to save the deeper red sauce for beef recipes.
Green Chiles:
The sauce already has green chiles, but stirring in an extra can adds more flavor and texture. You can even double it if you love that mild green chile taste.
Tortillas:
Traditional enchiladas use corn tortillas, which is what I recommend here. They’re sturdier and add that classic corn flavor. You can use flour tortillas if you prefer. I usually choose white corn tortillas to keep this casserole on the lighter side.
Cheese:
Monterey Jack melts beautifully, but white cheddar or mild cheddar also work well. I recommend shredding your own from a block. Pre-shredded cheese contains anti-caking agents that can affect how smoothly it melts.
Onions:
I layer raw chopped green onions right into the casserole. They soften perfectly in the oven and keep this recipe no-cook before baking. You can sub with diced white or yellow onion if that’s what you have.
Optional Extras:
Black olives, chopped jalapeños, or sautéed onions and garlic are all great additions.

Mix the Green Chile Chicken Filling
Start by reserving ½ cup of enchilada sauce and setting it aside.
In a large bowl, combine the remaining green chile enchilada sauce, canned green chiles, and shredded, cooked chicken. Stir everything together until the chicken is evenly coated and saucy.
You’re basically making the enchilada filling without any stovetop cooking.
Note: I serve this dish with sour cream on the side, but if you want a creamy filling you can stir about 2/3 cup of sour cream right into the chicken mixture.
Prepare the Tortillas and Base Layer
Because tortillas are round and a 9×13 baking dish is rectangular, I like to slice the tortillas in half. The flat edges line up nicely along the sides of the dish and give you better coverage.
Spread the reserved ½ cup of enchilada sauce across the bottom of the baking dish. This keeps the tortillas from sticking and adds moisture.
Lay down your first layer of tortillas. It usually takes about 5-6 tortillas, or 10-12 halves, to cover the bottom.
Layer the Chicken, Cheese, and Onions
Spoon ⅓ of the chicken mixture over the tortillas and spread it evenly.
Sprinkle ⅓ of the shredded cheese over the top, followed by ⅓ of the chopped green onions (or vice versa – it’s up to you).
Repeat the layers two more times so you have three total layers, ending with onions or cheese on top.
If you’re adding olives or jalapeños, sprinkle them between layers or over the top. You really can’t go wrong here.
Bake Until Hot and Bubbly
Bake in a 350 degree oven for about 25 minutes.
Since the chicken is already cooked, you’re simply heating everything through and melting the cheese. I start checking around the 20 minute mark. You’re looking for bubbly edges and fully melted cheese.
Let the Enchilada Casserole Rest Before Serving
I truly believe this deserves its own step.
If you cut into it right away, it will be delicious but a little messy. Let it rest for 10 to 30 minutes so the layers can settle. You’ll be able to slice and serve neat portions that hold together beautifully.

Recipe Notes & Tips for Chicken Enchilada Casserole
Shredded Chicken Shortcut:
One easy option is to use rotisserie chicken. It’s quick and convenient.
What I like to do is boil chicken breasts in salted water for about 20 minutes, shred them in my 14 cup Cuisinart food processor (which I absolutely love!), and freeze the shredded chicken in portions. I make several batches at once so I always have some ready. It’s more cost effective when chicken is on sale and perfect for recipes like this, soups, or casseroles.
If I already have the food processor out, I go ahead and shred my block of cheese too. That’s my rule for justifying the cleanup.
Make Ahead:
You can assemble this casserole the morning of or the day before. Cover and refrigerate. Remove it from the fridge about 30 minutes before baking so you’re not placing a very cold dish into a hot oven. You may need to add a few extra minutes to the baking time.
Freezing:
I like to freeze this casserole before baking. Thaw it in the refrigerator the day before you plan to serve it, then bake as directed. Disposable aluminum pans work well for freezer meals.

This layered chicken enchilada casserole has all the flavor of classic green chile enchiladas without the rolling. It’s an easy, Tex-Mex dinner that’s perfect for busy nights or make-ahead meals. Just layer, bake, and serve.

- 15-18 corn tortillas
- 3 (10 oz) cans green chile enchilada sauce
- 1 (7 oz) can green chiles
