French bread
I skip the fancy artisan loaves here. I always grab the long French bread my grocery store bakes in-house. It’s softer, less crusty, and perfect since it’s going back into the oven anyway. Bonus points for being cheaper.
Cream cheese
Full-fat, block cream cheese is the way to go. Let it soften ahead of time so it blends smoothly.
Cheddar cheese
I recommend using mild cheddar over sharp cheddar, since it has a higher moisture content and is super creamy when melted. Be sure to get a block and shred it yourself. Pre-shredded cheese has an anti-caking coating on it and doesn’t melt nearly as well.
Jalapeños
Fresh jalapeños are key here. One gets minced and goes into the cheese mixture and the other is sliced into rings for the top. If you want more heat, look for darker green peppers or ones with light lines on the skin. For less heat, remove the seeds and membranes.
Bacon

- Cut the French bread into two pieces, then slice each piece open lengthwise to create four large sections.
- In a bowl, mix the softened cream cheese, softened butter butter, and sour cream until completely smooth and creamy. (I use an electric mixer for this step.)
- Fold in the minced jalapeño, garlic, bacon and green onion. Once that is well combined, stir in the shredded cheddar cheese.
- Spread the cheese mixture evenly over the bread, going as close to the edges as possible.
- Top with sliced crumbled bacon and sliced jalapeños.
- Bake until the cheese is melted, bubbly, and lightly golden.
- Slice and serve while hot.
