Jalapeño peppers
I use sliced pickled jalapeños from a jar, rough chopped. They’re already soft, consistently spicy, and perfect for a creamy dip.
A little of the brine adds extra jalapeño flavor and helps loosen the dip so it’s easy to scoop. Fresh jalapeños work too, but I recommend roasting or sautéing them first so they soften properly.
Cream cheese
Full-fat, block-style cream cheese is a must here. Let it soften at room temperature so it blends smoothly without lumps.
Cheddar cheese
Sharp cheddar adds great flavor. Mild cheddar melts a bit more, but this dip is creamy rather than stretchy, and sharp works beautifully.
Sour cream
This is the secret to that smooth, glide-your-cracker-right-through texture. Light sour cream works just fine if that’s what you have.
Bacon
Cook it until truly crispy, then chop into small bits. You can make it a day ahead, which is a huge help for party prep. It won’t take a full package so you could make these easy candied bacon crackers too.
Chives
I mix them into the dip and sprinkle them into the topping for color and a mild onion flavor.
Panko breadcrumbs
Larger and crunchier than regular breadcrumbs, they give you that classic jalapeño popper topping vibe.

How to Make Jalapeño Popper Dip

- Soften the cream cheese: Take it out of the fridge about 30–45 minutes before you start.
- Cook the bacon: Cook until crispy using your preferred method, then drain on paper towels. Once cool, chop into small bits. This can be done a day ahead.
- Mix the creamy base: In a medium bowl, beat the softened cream cheese and sour cream with an electric mixer until smooth and creamy.
- Add the flavor: Stir in the chopped jalapeños, a little jalapeño brine, bacon, some of the chives, garlic powder, and onion powder until well combined.
- Fold in the cheese: Add the shredded cheddar last and mix until evenly distributed.
- Make the topping: In a small bowl, combine panko breadcrumbs, melted butter, and the remaining chives.
- Assemble and bake: Spread the dip into a baking dish, sprinkle with the breadcrumb topping, and bake until hot and lightly golden.

Make-Ahead Tips for Jalapeño Popper Dip
This jalapeño popper dip is very make-ahead friendly, which is a lifesaver for parties and game days. You can prep it in stages or fully assemble it ahead of time.
Prep ingredients ahead (1–2 days before)
A day or two before making the dip, you can get the prep work out of the way:
- Cook the bacon until crispy, then crumble or chop
- Shred the cheddar cheese
- Chop the chives
Store everything in separate containers in the refrigerator. When you’re ready to make the dip, it’s mostly just stirring everything together.
Assemble the dip ahead (up to 1 day before baking)
You can also fully assemble the dip in advance and bake it right before serving.
- Prepare the dip mixture and spread it into the baking dish
- Make the breadcrumb topping, but keep it separate
- Cover the dip tightly and refrigerate
When ready to bake, remove the dip from the fridge about 45 minutes before baking to take the chill off. Sprinkle the breadcrumb topping evenly over the dip, then bake as directed.
Since the dip is starting cold, you may need to add a few extra minutes to fully heat it through. If the breadcrumbs start browning too quickly, loosely cover the dish with foil toward the end so the topping doesn’t burn.
Freezer notes
I don’t recommend freezing this dip. Cream cheese and sour cream can change texture once frozen and thawed, and the breadcrumb topping won’t hold up well. This one is best made fresh or prepped ahead in the refrigerator.
Game Day Hosting Tip: If you’re hosting on game day, this is a great dip to assemble the night before. Keep it covered in the fridge, then pull it out while the oven preheats so it can take the chill off.
