Walking tacos are one of those meals that instantly make things more fun. They’re portable, customizable, and perfect for feeding a group without slowing the party down.

This is one of my favorite ways to switch up Taco Tuesday, and it’s practically a must for Super Bowl parties or any casual get-together. All you have to do is cook up some taco meat, set out a variety of chips and toppings, and let everyone build their own right in the bag.

I’ve always loved a good “meal with chips” situation, so this was right up my alley from the start. Back in college, they served Frito pie one day, which is more like chili over chips.

So when I later came across the idea of walking tacos, it immediately made sense. This version leans more classic Tex-Mex taco, especially when you use Doritos, and you get all those familiar taco flavors packed into one easy-to-eat bag.

Years ago, I made them for one of my kids’ birthday parties, and they were an instant hit. The kids thought it was the coolest thing ever, and the adults were just as into it. It’s easy, low-mess, and honestly just a really fun way to serve tacos.

And if you’re setting up a walking taco bar, I’m including a free printable sign below to make it even easier.

What Is a Walking Taco?

A walking taco (sometimes called a traveling taco) is exactly what it sounds like—a taco you can eat while walking around.

Instead of a tortilla, you use a small bag of chips:

  • Crush the chips slightly
  • Add taco meat
  • Layer on toppings
  • Eat straight from the bag

No plates, no balancing act, and no need to sit down. It’s one of the easiest ways to feed a crowd without overcomplicating things.

Ingredients Needed for Walking Tacos

  • Ground beef
  • Taco seasoning
  • Doritos or Fritos (individual bags)
  • Shredded cheddar or Mexican cheese
  • Tomato
  • Shredded iceberg lettuce

Optional toppings: sour cream, guacamole, salsa, pico de gallo, diced onion, cilantro, jalapenos – and the list goes on

Ingredient Notes and Substitutions

Ground beef
Use whatever blend you prefer. I usually go with 90/10. Just drain off excess grease before adding seasoning.

Taco seasoning
A store-bought packet works great, but homemade taco seasoning is easy if you already have spices on hand. Plus you can adjust the heat level to your preference.

Chips (walking taco chips)
Individual bags of Doritos or Fritos are classic. Nacho cheese and Cool Ranch are always popular. Cool Ranch always disappears first at parties! You can also mix it up with different flavors for a taco bar.

Some stores carry bags that open along the side, but regular snack bags work just fine.

Cheese
I always recommend freshly shredded cheese which has a richer flavor than pre-shredded. Cheddar is my go-to for Tex-Mex taco recipes like this one, but other cheeses like pepper jack and Monterey Jack are great too. If you’re making a walking taco bar you could set out multiple choices.

Tomatoes
Seed them before dicing so you don’t end up with extra moisture in the bag.

Lettuce
Shred it finely so it layers in easily and doesn’t take over each bite. I also like to cut the long shredded lettuce in half.

How to Make Walking Tacos (Step-by-Step)

Detailed recipe and instructions are in recipe card at bottom of post.

  1. Cook the taco meat
Brown the ground beef in a skillet over medium-high heat. Break it up into small pieces. Add taco seasoning and prepare according to package directions, or use 2–3 tablespoons homemade seasoning with up to ¼ cup water. Let it simmer for 5–10 minutes. For parties, transfer the meat to a slow cooker on warm.
  2. Crush the chips
Gently crush each unopened bag into smaller pieces. Open the bag at the top (the sealed edge) and fold it over (do this carefully so bag doesn’t tear), or cut the long side with scissors for a wider “bowl” to eat out of.
  3. Assemble the walking tacos
Add taco meat first. Sprinkle on some cheese. Layer in lettuce, tomatoes, and any additional toppings. Don’t overthink it!
  4. Serve and eat
Grab a fork and eat directly from the bag.

💡 Easy Party Setup Tip: Keep a pair of clean kitchen scissors at your taco bar so guests can slice their chip bags open for easier eating.

Recipe Notes and Tips

  • To stretch the taco meat for more servings, you can add a can of pinto or black beans.
  • Don’t overfill the bag—it gets hard to mix and eat
  • Add cheese right after the meat so it melts slightly
  • Offer a few chip flavors so guests can choose
  • Keep toppings simple and cut finely so everything fits easily
  • Forks work better than spoons for this
