Ground beef
I like using lean beef such as 90/10 or 85/15. Ground turkey can be substituted if you prefer, although the flavor will be different.
Taco seasoning
I usually use my homemade taco seasoning, which I keep in a jar in the pantry. It’s much more cost effective than store packets and I love the flavor. You can absolutely use a store-bought packet if that’s easier.
Diced tomatoes with chiles
I like the kind that includes green chiles. They make the beef mixture slightly saucy and add a little extra flavor.
Queso Oaxaca cheese
This is my favorite cheese for baked tacos. It’s often called the mozzarella of Mexican cooking because it melts beautifully and has a mild flavor.
Other good melting options include:
- Chihuahua cheese
- Asadero cheese
- Monterey Jack
I recommend avoiding crumbly cheeses like cotija or queso fresco here. Those are better used as toppings instead of inside the tacos.
Corn tortillas
White or yellow corn tortillas both work. I personally prefer white corn tortillas for their slightly milder flavor and higher moisture content.
You can also use flour tortillas if you prefer them, but corn tortillas bring a more authentic taco flavor.
White onion
Finely dice the onion. White onion is best here because it has a milder flavor when eaten raw.
Cilantro
Chop enough to sprinkle over the finished tacos.
Avocado and lime
Sliced avocado adds a creamy contrast to the crunchy tacos, and lime juice brightens all the flavors.

How to Make Cheesy Baked Ground Beef Tacos

Cook the seasoned ground beef filling
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease if needed.
Add the taco seasoning and cook for about 1–2 minutes to toast the spices and coat the meat.
Stir in the diced tomatoes with chiles and cook for another 2 minutes until everything is heated through and slightly saucy. Add up to 1/4 cup water if you like it saucier.
Shred the cheese
While the meat cooks, prepare the cheese so everything moves quickly once the tacos are assembled.
Queso Oaxaca usually comes in a round ball. Simply pull it apart with your hands to create long, thin shreds. It naturally separates into strands similar to string cheese. If yours isn’t pulling apart easily (mine wasn’t), just use a regular cheese grater.
Set the shredded cheese aside until you’re ready to assemble the tacos.
Prepare the corn tortillas for oven tacos
Corn tortillas should be warm or at least room temperature so they don’t crack when folded. If needed, place them on a microwave-safe plate, cover with a damp paper towel, and microwave for about 30 seconds.
Place the tortillas on the baking sheet.
Fill the tortillas with beef and cheese
Add a scoop of the seasoned beef mixture to one half of each tortilla.
Top the beef with a generous sprinkle of shredded queso, then fold the tortilla over to form a taco shape.
Arrange the filled tacos evenly on the baking sheet.
Bake the tacos until crispy
Bake the tacos in a 400°F oven for about 15 minutes, or until the tortillas are crispy and the cheese is melted.
While the tacos bake, prep the toppings.
Finely chop the white onion and cilantro. Slice the avocado and cut lime wedges.
Once the tacos are done, top them with onion, cilantro, avocado slices, and a squeeze of lime.
Tips for Baking Corn Tortillas for Crispy Oven Tacos
I’ll be honest, corn tortillas can sometimes split open when you bake them for tacos in the oven. But I love the flavor they bring, so here’s a few simple tips I’ve come up to reduce splitting.
Start with the freshest tortillas
Moisture helps prevent cracking. I grab the package with the latest expiration date, choose white corn tortillas (which have a little more moisture than yellow), and keep them sealed in the plastic bag until I’m ready to use them.
Warm them well before folding
Cold tortillas crack easily. Warm them covered with a very damp paper towel in the microwave until they’re almost too warm to touch. I warm half at a time, fill and fold those tacos, then warm the second half.
Fold and flip the tacos
After adding the filling, gently fold the tortilla and flip the tacos over so the weight of the filling helps hold it closed while baking. You may also notice faint lines running across corn tortillas. I try to fold against those lines since I’ve noticed the tortillas tend to split along them.
Use the double tortilla trick if needed
Many taquerias serve tacos with two corn tortillas for extra support. If some of yours crack while baking, you can warm extra tortillas in a dry skillet for about 15 seconds per side and use them as an outer layer. Another option is to drape tortillas directly over oven rack grates to crisp them into taco shell shapes.

Instructions
- Preheat oven to 400°F.
- Prepare the ground beef taco filling.
