Sheet pan chicken fajitas are one of my go-to dinners when I’m staring down a package of chicken breasts and trying to figure out something everyone will want to eat. I make them at least once or twice a month, and they always hit that sweet spot of easy and delicious.

With just chicken, bell peppers, onion, lime, and a simple seasoning, you’ve already got the makings of a solid, satisfying dinner, all on one pan.

The first time I ever had chicken fajitas was at Chili’s—probably not the only one! Years later, a trip to Puerto Vallarta changed everything when I tried fajitas at a small outdoor spot called Fajita Banana, cooked over a blazing grill with perfect char.

Ingredient Notes & Tips

Chicken
I recommend slicing the chicken into thin, uniform strips across the grain. This means slicing the breasts the long way into long, even strips. It helps keep the chicken tender and helps prevent that dreaded rubbery texture, if you know, you know.

Oil
Olive oil is my go-to here, but avocado oil works well too, especially if you like a slightly higher smoke point.

Lime Juice
Fresh lime juice adds brightness and helps tenderize the chicken. I always add a splash when marinating because lime and fajitas just belong together.

Onion
White onion is my first choice, followed by sweet onion or yellow. Red onion works, but it’s not my top pick for fajitas.

Bell Peppers
I almost always use green and red bell peppers, but yellow or orange work too. You’ll want three total, so feel free to mix and match.

Fajita Seasoning
I usually use my homemade fajita seasoning, but a store-bought packet works too. If you’re mixing your own, a blend of chili powder, cumin, oregano, smoked paprika, onion powder, garlic powder, salt, pepper, and optional cayenne does the trick.

I keep a large batch of my homemade fajita seasoning on hand and just scoop out a couple of tablespoons for this recipe. It’s an easy shortcut that makes an already quick dinner even faster.

How to Make Sheet Pan Chicken Fajitas

Option 1: One-Pan Method (Fastest and What You See in the Photos)

This is the quickest way to make these and works great when dinner needs to happen now.

  1. Preheat the oven to 425°F. If making your own fajita seasoning, mix the spices together in a small bowl and set aside.
  2. Slice the bell peppers and onion into strips. Slice the chicken breasts into thin, uniform strips across the grain. Add the chicken, peppers, and onion directly to a large rimmed sheet pan.
  3. Drizzle the olive oil evenly over everything, then sprinkle with the prepared fajita seasoning. Using clean hands or gloved hands, toss everything together until well coated.
  4. Spread the chicken and vegetables into a single layer. I like to make sure the chicken is touching the pan so it gets a little sear. If you have about 20 extra minutes, let the chicken and veggies marinate on the pan before baking.
  5. Bake for 18 to 20 minutes, flipping or tossing the chicken halfway through using tongs.
  6. During the last 5 minutes of cooking, wrap tortillas in foil and place them in the oven to warm.
  7. For extra char on the vegetables, broil for the last 2 minutes, keeping a close eye on them.
  8. Remove from the oven and immediately squeeze fresh lime juice over the fajitas.
  9. Serve right away with your favorite toppings.

Option 2: Marinated Sheet Pan Chicken Fajitas (If You Plan Ahead)

This option adds deeper flavor and makes it possible to preheat the pan for better browning. When the chicken and vegetables hit that hot pan, they start to sear right away, helping with caramelization and keeping moisture in.

Marinating doesn’t add more hands-on work, just a bit of planning.

  1. Slice the chicken, peppers, and onion and add them to a large bowl or glass dish.
  2. Add olive oil, fajita seasoning, and fresh lime juice. Toss well to coat everything evenly.
  3. Cover and marinate up to 4 hours.
  4. When ready to cook, preheat the oven to 425°F with a sheet pan inside.
  5. Carefully remove the hot pan, lightly oil it, and arrange the chicken and vegetables in a single layer using tongs.
  6. Bake for 18 to 20 minutes, tossing halfway through, until the chicken is cooked through.
  7. Broil for 1 to 2 minutes at the end if you’d like extra char.
  8. Warm tortillas during the last 5 minutes, then serve immediately.

FAQs

Can I make these on the grill?
Yes. For grilling, cook the chicken breasts whole and slice them after grilling. This helps keep the meat juicier and prevents small pieces from falling through the grates.

Can I cook chicken fajitas on the stove?
Yes. Use a cast iron skillet if possible. Heat 1 to 2 tablespoons of oil over high heat, sear the chicken for 3 to 5 minutes per side, remove, then sauté the vegetables for 4 to 5 minutes. Add the chicken back and cook until done.

Do I have to use chicken breasts?
No. Boneless, skinless chicken thighs work well and often come out even juicier.

  • 1½ pounds chicken breasts, boneless skinless
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 2 tablespoons homemade fajita seasoning
  • 1 white onion, sliced

  • ½ tablespoon chili powder

  • ½ teaspoon dried oregano

  • ¼ teaspoon onion powder
  • ½ teaspoon salt
  • pinch black pepper

Instructions
