Pancake Mix in a Jar Recipe
This recipe makes enough dry pancake mix to fill a pint mason jar (16 ounces). You may also want to check out this recipe for mason jar buttermilk pancake mix.
Dry ingredients for the pancake mix
- flour
- baking powder
- granulated sugar
- salt
Additional ingredients for the pancake batter
- eggs
- milk
- melted butter
To make the pancake batter, the recipient of the jar simply combines the dry mix with eggs, milk and melted butter.

Step-by-Step Instructions for the Pancake Mix
- Whisk together the four dry ingredients (flour, baking powder, sugar and salt) in a bowl.
- Transfer the pancake mix to a pint mason jar. Gently pack down the mix halfway through with the back of a spoon so the mix fits in the jar.
- Seal the jar and store the pancake mix in cool dry place for up to 6 months until ready to use. (Add a gift tag with cooking directions if giving this mason jar mix as a gift.)

How to Prepare Pancakes Using the Jar Mix
- Dump the pancake mix into a bowl. Fluff with a fork.
- Melt the butter and let it cool. Meanwhile, in a separate bowl, whisk the eggs. Combine milk and melted butter with the eggs, then add to pancake mix. Stir just until combined.
- Heat a non-stick griddle to 350-375 °F. Lightly oil or butter if desired. Pour 1/4 cup pancake batter onto griddle per pancake. Flip when top and sides are bubbling and pancake is light golden brown.
Recipe Notes
Measure the flour properly. To get the correct amount of flour, use the fluff, scoop, level method.
First, fluff the flour up in the bag or canister with a fork. Next, scoop it by the spoonful into the measuring cup. Lastly, level the flour in the measuring cup with the back of a knife.
One cup should equal about 120 grams.
Do not skip the baking powder. It’s a leavening agent and what makes the pancakes fluffy.
For gift-giving or meal-prepping, sterilize the jars before filling them. To sterilize, put in boiling water, remove and make sure they’re completely dry and cool before adding the mix.
Do not over-stir the pancake batter. A few lumps in the batter is ok. If you stir too much, the pancakes may come out too chewy as opposed to fluffy.
For the fluffiest pancakes, let the batter rest 15 minutes, then cook the pancakes on a griddle that’s 350-375 °F. The heat activates the baking powder, so make sure the griddle is hot enough. I like to make pancakes with an electric griddle where I can control the temperature.
