Cook the Pasta
I like to start with the pasta so I can prep everything else while it cooks.
Bring a large pot of salted water to a boil and cook the pasta just until al dente. You want it tender but still with a little bite so it holds up in the creamy dressing.
Drain and rinse with cold water just enough to stop the cooking. Don’t over-rinse or you’ll wash away too much starch, which helps the dressing cling to the pasta.
Char the Corn
If you can, grill the corn outdoors for the best flavor. It adds a little extra smokiness that works really well in this salad. Turn the corn occasionally so it chars on multiple sides.
If you’re using the stovetop, heat a grill pan or cast iron skillet over high heat and cook the corn until about half the kernels are charred and the color deepens.
If you’re having trouble getting a good char, go ahead and cut the kernels off the cob and return them to the hot pan. They’ll pick up color more quickly that way.

Chop the green onions (both the white and green parts), cilantro, and jalapeños. Most of the heat in a jalapeño is in the seeds and ribs, so remove those if you want to keep the spice level more mild.
Make the Dressing
In a small bowl, combine the mayonnaise and sour cream in equal parts. Add the lime juice, hot sauce, chili powder, and salt, then whisk until smooth.
If you’re squeezing the lime by hand, one trick I use is pressing it between the handles of a pair of tongs to get every last bit of juice out.
