Growing up, s’mores were a summer rite of passage. I can still picture the backyard firepit, all of us carefully toasting marshmallows until one inevitably burst into flames. We’d end up sticky, laughing, and smelling like campfire for days.

Now I make them for my grandkids, but I’ll admit, I still get nervous about tiny hands near open flames.

Ingredients You’ll Need

  • Graham crackers
    I always grab Nabisco. Some store brands (I’m looking at you, Target) just don’t quite hit that nostalgic graham cracker flavor.
  • Marshmallow fluff (or marshmallow cream)
    No need to melt anything here. Just spread on some fluff.
  • Milk chocolate chips
    The slightly melted Hershey chocolate bar is the best part of a classic s’mores, in my opinion, so I strongly suggest going with milk chocolate. You’ll melt them gently in the microwave.
  • Sea salt
    Just a pinch takes these from sweet treat to sweet-and-salty perfection.

How to Make Marshmallow Fluff S’mores Bites

  1. Prep your tray
    Line a baking sheet with parchment paper for easy cleanup.
  2. Break the graham crackers
    Carefully break each sheet into 4 small rectangles. I’ve found graham crackers these days don’t always break cleanly—definitely not like the tidy perforated ones from my childhood. For neat edges, slowly saw back and forth with a serrated bread knife like you’re slicing a baguette.
  3. Pipe the marshmallow fluff
    Spoon marshmallow cream into a plastic bag, snip a corner, and gently knead the bag to soften the fluff. Pipe a generous stripe onto half the cracker pieces. Spread evenly over each cracker with a knife.
  4. Make the sandwiches
    Gently press a second cracker on top. Some fluff might ooze out the sides, but try not to squish too much out. Place the tray in the freezer for 10 minutes to help them set. (Longer if you forget they’re in there. Ask me how I know.)
  5. Melt the chocolate
    Melt half the milk chocolate chips in 30-second bursts, stirring each time. Once melted, stir in the remaining chips until smooth. (Do not return to microwave; just keep stirring.) This helps keep the chocolate-dipped treats firm when sitting out at room temperature.
  6. Dip and decorate
    Dip one end of each s’mores bite into the melted chocolate and place it back on the tray. While the chocolate is still soft, sprinkle with sea salt or any toppings you’d like. Chill until the chocolate sets.
  7. Storing & Serving
    Keep your s’mores bites in the refrigerator or freezer. Remove just before serving. I like to serve in a single layer on an ice cold tray that I’ve placed in the freezer, since the marshmallow tends to spread as it warms up.

Tip for Dipping in Batches
This recipe makes 32 bites, so it’s easiest to work in batches. Keep some bites in the freezer while you dip and decorate the rest. To avoid reheating and messing with the chocolate’s temper, melt it in two separate rounds—one for each batch.

Tips for Melting Chocolate

  • Start with half the chips, then stir in the rest off-heat. It’s an easy trick to get glossy chocolate that holds up even after they leave the refrigerator.
  • Don’t overheat. Chocolate scorches fast. Go slow and stir often.
  • For chocolate that stays firm in warm temps, melting wafers work well too.

Optional Toppings for Chocolate-Covered S’mores Bites

  • Graham cracker crumbs – Got some broken crackers? Crush them into “graham dust” and sprinkle over the chocolate.
